Mrs. Jones' Coconut Pie


1 c. sugar
2 tbs. flour
pinch salt
2 eggs
2/3 c. milk
1 c. flaked coconut
1 tsp. vanilla extract
2 tbs. melted margarine
1 unbaked 9" pie shell

Preheat oven to 375°.
In a large bowl, mix sugar, flour and salt.
In another bowl, beat eggs slightly;
mix thoroughly into dry ingredients with milk,
coconut, vanilla and margarine.
Pour into unbaked pie shell.
Bake in preheated oven until top is golden brown,
25-30 min. 6-8 servings.
