Amaretto Lace Cookies


1/2 cup Amaretto
1/2 cup butter or margarine
5/8 cup firmly packed dark brown sugar
1 cup finely chopped pecans
1/2 cup unsifted all-purpose flour
In a saucepan, combine Amaretto di Saronno,
butter or margarine and dark brown sugar.
Bring mixture to a boil.
Remove from heat and stir in pecans and flour.
Beat until well blended.

Drop mixture by level tablespoons onto greased cookie sheet.
Bake only 6 cookies at a time.
Bake in a preheated hot oven (375F) for 6-8 minutes,
or until deep brown and bubbly.

While cookies are still warm, roll up cookies like a jelly roll.
Cool.
Store in an airtight container in a cool dry place.
Makes 40 cookies.
