Anise Biscotti

1 c. sugar
1 tbs. anise seeds, crushed
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 large eggs
2 large egg whites
2 Tbsp. Grated lemon zest
1 Tbsp. fresh lemon juice
Preheat oven to 325F.
Combine flour, anise seeds, baking powder,
baking soda and salt.
Whisk together eggs, egg whites, lemon zest and
lemon juice, and add to the dry ingredients; mix well.
Working on a floured surface, shape the dough
into 2 logs, each about 14" long and 1 ½" thick.
Set the logs on prepared baking sheet and
bake for 20-25 minutes, or until firm to the touch.
Transfer the logs to a rack to cool.
Reduce the oven temperature to 300F.
Cut the logs diagonally into ½" thick slices.
Stand the slices upright on the baking sheet
and bake for 40 minutes. Let cool before storing.
Makes about 4 dozen biscotti.
