Apple Cake

2 cups shredded peeled apples
1/3 cup cooking oil
2 egg whites
1/2 tsp vanilla
1-1/2 cups all purpose flour
1/2 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 cup raisins
Preheat oven to 350F. Grease and flour 9" square pan.
Tap out excess flour. In large bowl, combine apples,
oil, egg whites and vanilla;
mix at low speed of electric mixer; blend well.
Mix flour, sugar, baking powder, baking soda, and cinnamon.
Add to egg mixture; mix well. Stir in raisins.
Pour batter into greased and floured pan.
Bake at 350F for 35 to 40 minutes or until
toothpick inserted in center comes out clean.
Cool completely in pan on rack.
