Apple Cake with Lemon Sauce

1 c. all purpose flour
1 c. sugar
1/4 c. shortening
1 tsp. EACH: baking soda, vanilla extract
1/2 tsp. EACH: cinnamon, salt
1/4 tsp. Nutmeg
1 egg
3 c. coarsely shredded, peeled cooking apples
(about 3 large apples)
3/4 c. coarsey chopped California walnuts
2 hours prior:
Preheat oven to 350F. Grease 8x8" baking pan.
Into large bowl, measure first 9 ingredients.
With mixer at low speed, beat ingredients until just mixed.
Add shredded apples; increase speed to medium and
beat 2 min., occasionally scraping bowl with rubber spatula.
Stir in nuts. Pour batter into pan and bake 45-50 min.
until top springs back when lightly touched with finger.
Serve warm or cold with Lemon Sauce Serves 8.
Lemon Sauce:
In 2 qt. saucepan, mix well 3/4 c. sugar, 2 tbs. cornstarch,
1/4 tsp. Salt, 1 egg and 1 1/2 c. water.
Cook over medium low heat, stirring constantly
With wire whisk or hand beater,
until mixture thickens (do not boil).
Remove from heat and stir in 1/4 c. lemon juice.
