Apple Cider Muffins


Into bowl sift together 2 c. flour,
1 tbs. baking powder
and 1/4 tsp. Salt.
Add 2/3 c. raisins and toss them
until they are evenly coated
with flour mixture
In another bowl, combine 1 c. apple cider,
3/4 stick of butter, melted, and
1 egg, lightly beaten.
Pour cider mixture over flour mixture,
stirring, and continue to stir batter
until just blended.
The batter will be lumpy.
Spoon it into 12 (2 1/2") buttered muffin cups,
filling each cup 2/3 full.
Sprinkle each muffin with cinnamon sugar
made by combining 1/4 c. sugar
and 1 1/2 tsp. Cinnamon.
Bake muffins at 400F for 20-25 min.,
or until they are browned.
