Apple Marmalade


1 orange
6 c. apples, chopped and peeled
2 c. water
3 tbs. lemon juice
5 c. sugar

Seed orange and slice thin.
Combine orange, apple, water and
lemon juice and let boil 10 min.,
gently until apples are tender.
Add sugar and cook, stirring constantly
until mixture comes to full boil and
sugar dissolves. Continue cooking until
jelly reaches 220F on thermometer,
or until thickened. Jar, seal and process
15 min. in boiling water bath.
Makes 3 pints.
