Bacon and Cheese Scalloped Potatoes


6 tbs. butter
3 lb. new potatoes
freshly ground pepper
3 slices bacon, cooked and crumbled
1 small onion, finely chopped
1 tbs. parsley
1 c. light cream
1 c. milk
1 c. grated Cheddar cheese

Melt butter in a 2-qt. baking dish.
Peel potatoes, if desired, and slice.
Arrange potatoes in dish and sprinkle with pepper.
Top with bacon, onion and parsley.
Pour cream and milk over potatoes.
Top with cheese. Bake at 375F for 45-50 min.
Bakes 6-8 servings.
