Backwoods Biscuits

1/2 tsp. vegetable shortening
3/4 c. unsifted all purpose flour
1/4 c. cornmeal
1/2 tsp. baking powder
1/4 tsp. salt
2 tbs. butter, melted
1/3 c. milk
Preheat oven to 400F.
With shortening, smear a 7" circle on
small baking sheet or 9" pie pan; set aside.
In a mixing bowl, sift together flour,
cornmeal, baking powder and salt.
Add melted butter to milk and, using a fork,
stir into sifted dry ingredients until just blended.
Turn dough onto greased pan and with
rubber spatula, pat into 6" circle about 1/2" thick.
With knife, cut dough into four equal wedges.
Bake until biscuits are browned on top, 10-12 min.
Break or cut into wedges and serve hot.
Refrigerate leftovers; reheat at 350F or
in microwave. Makes 4 biscuits.
