Bacon Pecan Waffles

1 cup flour
1 Tbs. sugar
1 tsp. baking powder
1/2 tsp. baking soda
pinch of salt
1 cup buttermilk
1 Tbs. vegetable oil
1 large egg
1/2 lb. bacon, cooked crisp & crumbled
1/4 cup finely chopped pecans
Combine dry ingredients in a medium mixing bowl.
Make a well in the center and pour combined wet ingredients
into the well, stirring together. Add bacon and pecans quickly.
Do not overmix.
Spray non-stick cooking spray on a waffle iron and heat.
Pour waffle mixture on waffle iron.
Cook until you no longer see steam and the waffle iron is easy to open.
Use a fork to lift out the waffle.
Keep waffles warm by placing on an oven rack in a warmed oven
or an ovenproof dish. Serve with maple syrup.
