Baked Chicken Reuben


4 boneless, skinless chicken breast halves
salt and pepper to taste
1 (16 oz) can sauerkraut, drained
4 oz. Swiss cheese, sliced
1 1/4 c. Russian salad dressing
1 tbs. chopped parsley

Preheat oven to 325F.
Grease an 8" square baking pan.
Arrange chicken in pan and
sprinkle with salt and pepper.
Spoon sauerkraut over chicken
and top with Swiss cheese.
Pour dressing evenly over cheese.
Cover and bake in preheated oven
until chicken is tender,
up to 1 1/2 hours.
Sprinkle with parsley before serving.
Serves 4-6.
