Baked Pancake with Apple Syrup


2 tbs. butter
2/3 c. all purpose flour
2/3 c. milk
1/2 tsp. baking powder
4 eggs, beaten
apple syrup

Apple Syrup:
2 med. cooking apples,
peeled and thinly sliced
1/2 c. maple syrup

Melt butter in an ovenproof 12" skillet at 400°.
Combine flour, milk, baking powder and eggs;
mix well. Pour batter into hot skillet.
Bake 15-18 min. or until puffy and golden.
Cut into wedges; serve hot with Apple Syrup.
Serves 6-8.

Apple Syrup: Combine apples and
maple syrup in a small saucepan.
Bring to a boil;
reduce heat and simmer 2 min.
or until the apples are tender.
Yield: 1 2/3 c.
