Baked Eggplant Slices


1 eggplant, peeled and sliced
1/2 cup tomato sauce
1clove garlic, minced
1/4 teaspoon dried basil
1/2 cup reduced-fat Mozzarella cheese, shredded

Coat a baking sheet with no-stick olive oil spray.
Place the eggplant slices on the sheet
and spray them lightly.
Bake at 375° for 12 minutes.
In a small saucepan, combine the
tomato sauce, garlic, and basil.
Simmer for 5 minutes.
Remove eggplant slices from the oven
and turn them over.
Spoon enough sauce over each slice to cover it.
Sprinkle with the cheese.
Bake 10 to 12 minutes, or until eggplant is tender
when pierced with a fork and the cheese is melted.
