Baked Pancake with Apple Coconut Syrup

2/3 c. all purpose flour
2/3 c. milk
1/2 tsp. double acting baking powder
4 eggs
2 tbs. butter
Apple Coconut Syrup
Preheat to 400F.
In medium bowl, mix well first 4 ingredients.
(Batter will be lumpy).
In 12" metal handled skillet with rounded sides,
in oven, heat butter until melted and hot.
With pot holder, remove skillet from oven;
pour in batter. Bake 15-18 min.
until pancake is puffy and golden.
Meanwhile, prepare Apple Coconut Syrup.
Cut pancake into wedges and serve with syrup.
6 servings.
Apple Coconut Syrup:
In 2 qt. saucepan over high heat, heat to boiling
2 med. cooking apples, cut into thin wedges,
1/2 c. maple-blended syrup and
3 tbs. shredded coconut;
occasionally turning apples.
Reduce heat to low and simmer 1 min.
or until apples are tender.
