Banana Brownies

1 ripe banana
1 c. sugar
1/4 c. apple juice
1 tsp. vanilla extract
1/4 oz. unsweetened chocolate, melted
1/2 c. flour
1/4 c. unsweetened cocoa powder
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
4 egg whites
Preheat oven to 350F.
Spray an 8x8" pan with
nonstick vegetable coating.
In a blender or food processor,
combine banana, sugar, apple juice,
vanilla and melted chocolate.
Blend until smooth.
In a bowl, sift together flour, cocoa,
baking powder, baking soda and salt.
Combine with banana mixture,
stirring only until dry ingredients
are well moistened.
Beat egg whites until they are
very foamed, not peaked,
and fold into batter.
Pour into prepared pan;
bake until a toothpick inserted
near the center comes out clean,
about 35 min. Cool and serve.
Makes 16 servings.
