Banana Fritters


4 ripe bananas, mashed
3/4 c. flour
1/2 tsp. salt
3 tbs. sugar
oil
cinnamon sugar

Combine bananas, flour, salt and
sugar in a bowl.
Mix thoroughly and beat slightly.
Take one full tbs. of mixture for each fritter.
Heat oil 1/2" deep to 350-375F in frying pan and
fry fritters, a few at a time, 1 1/2-2" min.,
turning until golden brown on both sides.
Drain on paper towels.
Sprinkle with cinnamon.
Yield: 25.
