Banana Brunch Coffeecake


2 ripe bananas
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant
vanilla pudding mix
1/2 cup vegetable oil
4 eggs
1 tsp. vanilla extract
1/2 c. chopped almonds
1/3 c. packed brown sugar
1 tsp. ground cinnamon
1/2 teaspoon ground nutmeg
Fresh sliced bananas, berries, mint,
powdered sugar for optional garnish

Puree bananas in blender.
Combine bananas, cake mix, oil, eggs
and vanilla in large mixing bowl.
Combine well and beat at medium speed,
8 min., scraping sides of bowl occasionally.

Combine almond, brown sugar, cinnamon
and nutmeg. Pour half of batter into
cake batter into greased bundt pan.
Sprinkle with sugar mixture.
Cover with remaining batter.
Insert knife and swirl in
figure eight patterns through layers.
Be sure not to over mix the layers.

Bake at 300F for 55 to 60 minutes.
Cool in pan for 10 minutes,
then invert onto rack to complete cooling.
Dust with powdered sugar
and garnish with fruit.
