Jumbo Banana Chocolate Chip Muffins


1 c. butter, softened
3/4 c. firmly packed brown sugar
3 c. mashed banana (about 6 medium)
1/2 c. milk
4 large eggs
1 tsp. vanilla
3 c. all purpose flour
2 tsp. EACH: baking powder, baking soda
1/2 tsp. salt
1 c. EACH: chopped pecans, semisweet chocolate morsels
Additional chocolate morsels, melted

Beat butter at medium speed with an electric mixer until creamy;
gradually add sugar, beating well.
Add mashed banana and next 3 ingredients,
beating until well blended.
Combine flour and next 3 ingredients;
add to butter mixture, stirring just until blended.
Stir in pecans and 1 c. chocolate morsels.
Spoon into greased jumbo (3 1/4") muffin pans,
filling one-half full. Bake at 375F for 25 min. or until
a wooden pick inserted in center of muffin comes out clean.
Cool in pan 5 min.; remove from pan immediately,
and let cool completely on a wire rack.
Drizzle with melted chocolate morsels, if desired.
Yield: 1 1/2 doz.
Note: to bake muffins in regular (2 1/2") muffin pans,
fill each muffin cup with 3 tbs. butter,
and bake at 375F for 15-18 min.
Remove from pans immediately.
Yield: 2 doz.
