Banana Chocolate Chip Cookies

2 large, very ripe mashed bananas
3/4 c. butter, at room temperature
1 c. brown sugar
1 egg
1 tsp. vanilla extract
2 c. flour
1 c. cornmeal
1 tsp. baking soda
1/2 tsp. Salt
3/4 tsp. Cinnamon
1/2 tsp. EACH: nutmeg, ground cloves
1 1/2 c. mini chocolate chips
Preheat the oven to 375F. Lightly grease 2 baking sheets.
Peel the bananas, put them on a plate and mash them with a fork.
In a mixing bowl, beat the butter with the brown sugar
until well-combined. Add the egg and beat until light and fluffy.
Beat in the mashed banana and the vanilla.
In another bowl, stir together the flour, cornmeal, baking soda,
salt, cinnamon, nutmeg and cloves. Stir well.
Add this to the creamed mixture and beat well.
Stir in the chocolate chips until they are well-distributed
in the dough. Drop the dough by teaspoonfuls onto
the greased baking sheets. Bake in the preheated oven
until the cookies are lightly browned 10-12 minutes.
Remove from the oven. Use a metal spatula to remove the cookies
from the sheets and cook them on a wire rack.
Repeat until all the dough is used up.
Makes 48 cookies.
