BANANA WALDORF


6 medium-size tart, red-skinned apples
3 large, ripe bananas
2 large stalks celery
6 to 8 tablespoons chopped walnuts
about 1 1/4 cups lemon mayonnaise
1 tablespoon lemon juice
lettuce leaves for garnish
Add the 1 tablespoon of lemon juice
to the mayonnaise and mix well.
Quarter, core and dice unpeeled apples into a large bowl.
Peel bananas, slice them into thin rounds
and add them to bowl.
Finely chop celery stalks and add them to bowl,
together with chopped walnuts.
Toss lightly but thoroughly with a large fork.

Add the lemon mayonnaise and
mix gently until pieces of fruit
are individually coated.
Chill lightly before serving.
Serve in a bowl lined with crisp green lettuce leaves.
Serves 6.
