Brenda's Whacky Cake Cream Cheese Muffins


Sift into large bowl:
2 & 1/4 c. flour
1 & 1/2 c. sugar
4 & 1/2 Tbs. cocoa
1 & 1/2 tsp. baking soda
1 & 1/2 tsp. salt

Make 3 wells with a spoon.
In one put 1 & 1/2 tsp. vanilla
In 2nd put 1 & 1/2 Tbs. vinegar
In 3rd put 1/2 c. plus 1 Tbs. oil
Pour 1 and 1/2 c. water over top and mix well.

Filling:
1 - 8 oz. pkg. cream cheese
1/2 c. powdered sugar (or to taste)

I use cupcake liners in a muffin tin.
Fill each about 3/4 full.
Add a blob on cream cheese mixture to center and
push down in toward center.

Bake at 350°, 30 min.
