James Beards's Hamburgers

2 lb. top quality chopped round or chuck
2-3 tbs. onion
1 tbs. heavy cream
freshly ground black pepper
Spread hamburger out on board. Grate onion into it
(use fairly fine grater to get just juice
and very finely grated onion).
Mix in cream and pepper and form into 6-8 patties.
Cook in heavy skillet with combination of butter
and oil over fairly high heat, 4-5 min. a side.
Salt before serving.
Serve with tomatoes and onions and home fries, and a salad.
