Big Edgar's Hotcakes


2 tbs. vegetable oil
1 egg, beaten
1 c. milk PLUS more if needed
1 c. sifted flour
1/2 tsp. salt
2 tbs. EACH: sugar, baking powder

In a large bowl, mix oil, egg and milk.
Sift flour, salt, sugar and baking powder
into milk mixture until smooth.
(If batter is too thick, add up to
2 tbs. of milk to thin). Cook on hot,
greased griddle, turning once after
bubbles form on surface of pancakes.
Makes 2-3 servings.
