Bing Cherries in Brandy

Remove stems and pits from 4 c. Bing cherries. Layer cherries with 1 lb. superfine sugar in a wide-mouthed, 2-qt. jar or crock. Pour 1 1/2 c. brandy over all. Enclose 1 tbs. each grated orange peel, whole allspice, whole cloves in a cheese-cloth bag and add to jar. Let stand at room temperature, covered, for at least six weeks, but the longer it stands the better it tastes. Remove bag when ready to use.
