Blackberry Dumplings
1 qt. frozen blackberries
1 c. sugar
1/2 tsp. lemon extract
3/4 tsp. salt, divided
1 1/2 c. all purpose flour
2 tsp. baking powder
1 tbs. sugar
1/4 tsp. ground nutmeg
2/3 c. milk
whipped cream
Bring blackberries, 1 c. sugar, lemon extract and 1/4 tsp. salt
to a boil in a large ovenproof Dutch oven;
reduce heat and simmer 5 min.
Combine remaining 1/2 tsp. salt, flour, baking powder,
1 tbs. sugar and nutmeg in a med. bowl;
stir in milk just until blended (dough will be thick).
Drop dough by tablespoonfuls onto hot blackberry mixture.
Bake, uncovered, at 400F for 35 min. or until golden.
Serve with whipped cream or ice cream, if desired. Yield: 6 servings.
