Blueberry Cheesecake Squares


1 cup flour
1 cup sugar, divided
1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 cup half and half
1/4 cup butter, melted
1 egg, beaten
1 1/2 teaspoons vanilla extract, divided
2 eggs, beaten
2 cups fresh blueberries
1 1/4 cups Ricotta cheese
1 1/2 teaspoons cornstarch

Combine flour, 1/2 cup of the sugar, baking powder,
and salt in a mixing bowl. Add half and half, butter,
1 beaten egg, and 1 teaspoon of the vanilla extract.
Spoon batter evenly into a greased 9x9" baking pan.
Sprinkle blueberries over batter.

Combine the remaining beaten eggs, Ricotta cheese,
the remaining ½ cup sugar, cornstarch, and
the remaining 1/2 teaspoon vanilla in a mixing bowl
until blended. Spoon evenly over blueberries.
Bake in preheated 350° oven for 55 to 60 minutes
or until knife inserted in center comes out clean.
Cool. Cut into squares.
