Blueberry Omelet


4 eggs
2 cups fresh blueberries
1 tsp grated orange rind
2 tbsp. fresh orange juice
pinch of salt
1 tbsp. sugar
1/4 cup cream or milk

Beat eggs lightly with a fork.
Mash cleaned fruits with rind, juice, salt and sugar.
Add to eggs, stir-in cream or milk.
Cook in butter as you would any omelet, fold and serve.
Serves 2-4
