Blueberry Betty


1 qt. blueberries, fresh OR frozen
1 tbs. lemon juice
1/2 tsp. ground cinnamon
1 c. EACH: flour, sugar
1/2 c. cold butter, cut into 6 pieces

Place blueberries in colander and
rinse with cold water. Discard any stems.
Place berries in 1 1/2 qt. casserole dish.
Sprinkle with juice and cinnamon.
In a good processor fitted with metal blade,
place flour, sugar and butter,
pulsing on and off,
until consistency of coarse meal.
Sprinkle over berries.
(Dish can be covered and refrigerated
up to 10 hours at this point.
Add 5 min. to baking time).
Bake in preheated 375F oven until
topping is golden brown, about 45 min.
For browner top, turn on broiler for 1 min.
Makes 6 servings.
