Blueberry Orange Bread

1(10 oz) pkg. frozen blueberries
in quick-thaw pouch, thawed
5 c. all purpose flour
1 1/2 c. orange juice
1 c. sugar
4 eggs
1/4 c butter, melted
2 tbs. baking powder
2 tbs. grated orange peel
2 tsp. salt
1 tsp. baking soda
About 1 1/2 hrs. before serving or
early in day: Preheat oven to 375F.
Drain blueberries and pat dry
on paper towels; set aside.
In large bowl with spoon, mix well all ingredients
except berries until flour mixture is just moistened.
Gently stir berries into batter. Pour batter into
two well-greased 1 1/2 qt. casseroles or
one 1 1/2 qt. casserole and one 9x5" loaf pan.
Bake 50 min. or until toothpick inserted in center
comes out clean. Remove breads from casseroles
to serve warm or cool breads on wire racks
to serve later. Makes 2 loaves.
