Black Walnut Kisses


2 egg whites, at room temperature
1/2 tsp. cream of tartar
1/4 tsp. salt
2/3 c. sugar
1/2 c. black walnuts -- chopped
1/2 tsp. vanilla extract

Preheat oven to 275 F.
In a small bowl, beat egg whites, cream of tartar, and
salt with an electric mixer on high speed until frothy.
Very slowly beat in sugar, a little at a time,
until all has been incorporated and whites are very stiff.
Fold in black walnuts and vanilla.

Drop by heaping teaspoonfuls 2" apart
onto generously greased cookie sheets.
Bake 10 min.
Turn off oven and let cookies stand
in closed oven for 2 hours.
Remove cookies from sheets and
store in a tightly covered container.
24 cookies.
