Broccoli and Swiss


1 lb. broccoli, coarsely chopped
2 tsp. salt
3 tbs. butter
2 eggs, beaten
2 tbs. flour
3 tbs. grated onion
1 1/4 c. milk
2 c. shredded Swiss cheese

Grease dish. Over high heat,
heat broccoli with 1/2 tsp. salt.
Cover and cook 10 min. Drain well,
squeezing out excess water.

Over medium heat, melt butter.
Stir in flour and 1 1/2 tsp. salt until smooth.
Add onion and cook for one minute.
Slowly stir in milk. Cook stirring constantly
until mixture thickens and begins to boil.
Remove from heat. Stir in cheese and broccoli
until cheese melts slightly. Stir in eggs.
Pour into dish. Bake 30 min. or lightly browned.
