Broccoli and Rice Casserole


2 pkg. frozen broccoli, thawed and
cut up OR 1 bunch fresh broccoli,
cut up and partially cooked
2 cans cream of celery soup
3/4 c. chopped celery (optional)
2 c. Uncle Ben's Quick Rice
(or 1 c. brown rice which has been half cooked)
3/4 c. chopped onion
1 stick melted butter
8 oz. grated Cheddar cheese or
8 oz. Velveta cheese
(texture will be different with Velveta)

Mix and bake in 2 qt. casserole at 350F until set
(approx. 45 min. to 1 hour).
Reheats very well.
