Brown Gravy


2 tbs. drippings
1 small onion, chopped fine
2 tbs all purpose flour
1 c. water or stock
1/2 tsp. Salt
1/8 tsp. Pepper

Melt drippings in saucepan, add onions, blend in the flour.
Stir until flour and onion are a rich brown.
Add liquid slowly, stirring constantly.
Add seasonings and cook until thickened and smooth.
