Buttermilk Lemon Pie


3 eggs
1 1/2 c. sugar
1 tbs. all purpose flour
1 tsp. lemon extract
1/2 c. buttermilk
3 tbs. butter, melted
2 tbs. lemon juice
1 9" pastry shell, unbaked

Beat eggs; add next 6 ingredients and mix well.
Pour into pastry shell.
Bake at 425F for 10 min.; place foil over edges of crust
and bake 5-10 min. longer or until set.
Let cook on wire rack. Makes one 9" pie.
