Cafe Brulot


1 c. brandy
peel of 1 med. orange
6 whole cloves
4 whole allspice
2 cinnamon sticks
3 tbs. sugar
3 c. hot double-strength coffee

On serving table, in blazer of chafing dish* over direct heat,
heat all ingredients except coffee until brandy is hot;
carefully ignite brandy with match.
Let flame for 1-2 min.
Slowly pour coffee into blaming brandy.
Ladle into 8 Cafe Brulot or demitasse cups.
Serves 8.

*or, in small saucepan over medium heat, heat all ingredients
except coffee until brandy is hot;
pour into warmed, heat-proof serving bowl;
ignite and continue as above.
