Café au Lait Squares


1 1/4 c. all-purpose flour, divided
1 c. quick-cooking oats, uncooked
1/2 c. brown sugar, firmly packed
1/3 c. butter, melted
1 tbs. instant coffee granules
1/4 tsp. salt
1/3 c. butter
2 oz. unsweetened chocolate (2 squares)
2 large eggs
1 c. sugar
2 tbs. coffee liqueur or cold brewed coffee
3/4 c. walnuts, toasted & chopped
chocolate covered coffee beans
coffee frosting

Combine 1/2 c. flour, oats, and next 4 ingredients;
stir well. Press into an ungreased 9" square pan.
Bake at 350º for 12 minutes.

Combine 1/3 c. butter and chocolate in a small saucepan.
Cook over medium-low heat until melted, stirring often.
Let cool.

Beat eggs at medium speed with an electric mixer
until thick and pale. Add 1 c. sugar and liqueur,
beating until blended. Stir in chocolate mixture,
remaining 3/4 c. flour, and walnuts;
spread mixture evenly over crust.

Bake at 350º for 25 minutes. Cool in pan on wire rack.
Spread Coffee Frosting over brownies.
Cover and let stand until frosting hardens.
Cut into squares.
Garnish with coffee beans, if desired. 16 squares.
