Cheese and Onion Pie


1 1/2 c. crushed soda crackers
1 c. melted butter
2 1/2 c. sliced onions
2 tbs. butter
1 1/2 c. scalded milk
3 eggs, beaten
1 lb. Cheddar cheese, shredded
salt and pepper

To make crust, combine crackers and melted butter,
and press into a large pie dish, spreading evenly.
In a large skillet, cook onions in 2 tbs. butter
until slightly brown. Spread on crust.

Add scalded milk to eggs.
Add cheese and stir until melted.
Season with salt and pepper to taste.
Pour over onions and bake at 350F for 45 min.
Serves 8.
