Cheddar Cheese Pie Crust


2 c. flour
1/2 tsp. salt
1/2 c. vegetable shortening
1/2 c. grated sharp Cheddar cheese, chilled
4-6 tbs. ice water

Combine flour and salt.
Cut in shortening and cheese until
mixture resembles tiny peas.
Add ice water, 1 tbs. at a time
and gently form into a ball.
Divide dough in half to make 2 (9") pie crusts.
Roll on a lightly floured surface to fit pie plates.
Crimp edges.
Prick with a fork on bottom and sides
and microwave, rotating twice,
on HIGH 5-6 min. for each crust.
Unbaked crust may be frozen in a plastic bag.
Makes 2 (9') pie shells.
