Cheesy Chowder


1 c. chopped potato
1/2 c. EACH: carrot, celery, onion,
green pepper (chopped on all of them)
3. c. (12 oz.) shredded sharp process
American cheese
4 tbs. butter
3 c. chicken broth
dash white pepper
2 c. milk
1/2 c. all purpose flour
1 tbs. snipped parsley

In Dutch oven, cook potato, carrot, celery,
onion and green pepper in butter till tender
but not brown; add chicken broth and pepper.
Cover and simmer 30 min. Blend together milk
and flour; add cheese and parsley.
Stir into chowder; cook and stir
till thickened and bubbly. Serves 7-8.
