Cherry French Bread Pudding

2 c. low-fat milk
2 tbs. butter
3 eggs
1/3 c. sugar
1 tsp. EACH: cornstarch, vanilla
1/4 tsp. salt
4 c. 3/4" cubes day-old French bread
3 c. pitted fresh sweet cherries
cinnamon sugar
In a saucepan, heat milk and
butter but do NOT boil;
remove from heat and set aside.
Beat eggs, sugar, cornstarch,
vanilla and salt together.
Gradually stir milk mixture
into egg mixture;
pour over bread cubes
and let stand 30 min.
Preheat oven to 350F.
Spread cherries over bottom
of a buttered 9" square pan.
Pour bread mixture over cherries.
Sprinkle with cinnamon sugar.
Bake in preheated oven
until thin blade inserted near center
comes out clean 30-40 min.
Cool slightly.
Makes 8 servings.
