Cherry Muffins


2 c. all purpose flour
1/4 c. sugar
1/4 c. chopped maraschino cherries
1 tbs. baking powder
1 tsp. salt
3/4 c. milk
1/4 c. vegetable oil
3 tbs. maraschino cherry juice
1 egg, beaten
2 tbs. chopped almonds
2 tbs. sugar

Combine first 5 ingredients in a large bowl;
make a well in center of mixture.
Combine milk, oil, cherry juice, and egg;
add to dry ingredients,
stirring just until moistened.
Spoon into greased muffin pans,
filling two-thirds full.

Combine almonds and 2 tbs. sugar;
sprinkle over muffins.
Bake at 375F for 25-30 min.
Yield: 1 dozen.
