WONDERFUL BAKED BEANS


This recipe if from an old friend, Chet Beckwith,
who shared lots of his recipes with me before he passed away.
He was honored that I was putting them on my website;
I was honored that he was willing to share them.
"This recipe could go into the category of "family style cooking"
because of its simplicity. I find, however, that it is such a
wonderful treatment of everyday baked beans that it is
marvelous for a company patio party or picnic.
It is another one of those things that I could actually
make myself sick overeating because I like it so much.

3 CANS (11 OZ.) CAMPBELL'S PORK AND BEANS
2 TBS. BROWN SUGAR
2 TBS. MOLASSES, RUNNING OVER
1 LARGE ONION, FINELY CHOPPED
1 TBS. VINEGAR
1 SMALL GREEN PEPPER, FINELY DICED
2 TBS. CATSUP, RUNNING OVER
5-7 SQUIRTS LEA & PERRIN
SALT AND PEPPER TO TASTE
1 TBS. YELLOW MUSTARD
2 SLICES BACON

Mix all of the above together, except bacon.
Pour into baking dish, preferably a Pyrex loaf dish.
Strip top with bacon and bake uncovered at 300-325F
for 1 ½ hours to 2 hours.
Serves 8-10.

"TIP: I like to serve this with baked ham or barbecued chicken
and Fletcher Miller's Potato Salad.
I also prefer to serve it at room temperature.
I find it is too "runny" if served hot, but it sorta firms up
when cooled to lukewarm or room temperature.
Sometimes I add several shakes of garlic chips and
also a few shakes of cracked red pepper, mixing in
with the other ingredients before cooking.
