Chicago Diner Meatloaf


1 lb. ground beef
1 med. zucchini, finely grated
1 c. bread crumbs
1/3 c. chili sauce, divided
1 tbs. horseradish
1/2 tsp. black pepper, divided
1/4 tsp. salt

Preheat oven to 350F.
Lightly grease a 9x13" pan; set aside.
In a large bowl, combine beef, zucchini,
crumbs, 1/4 c. chili sauce, horseradish,
1/4 tsp. pepper and salt.
Blend just until mixed. Divide into 4 portions.
Shape into oval loaves.
Arrange loaves in prepared pan.
Bake uncovered in preheated oven for 25 min.

Remove from oven; brush with remaining
chili sauce mixed with remaining pepper.
Return to oven and bake until juices run clear,
about 5 min longer. Makes 4 servings.
