Chicken Caribe


2 lb. frying chicken pieces
2 tbs. salad oil
1 c. tomato soup
1/2 tsp. Salt
1 1/3 c. Minute Rice
1/4 c. chopped pimento
1 1/3 c. water
2 med. cloves garlic, minced
1/2 tsp. crushed oregano leaves
1 med. green pepper, cut in thin strips

Brown chicken in oil in skillet. Pour off fat.
Add soup, water, garlic, oregano and salt.
Cover; simmer 35 min., stirring occasionally
Move chicken to sides of skillet.
Bring liquid in skillet to a boil;
stir in remaining ingredients
Cover and simmer 10 min. or until
most of liquid is absorbed. 4 servings.
