Chicken Polynesian


8 pieces chicken breasts
small onion, chopped
2 tbs. butter
1 tbs. chicken stock base
2/3 pt. sour cream
ground corriander
cayenne pepper
3 pieces of glazed ginger cubes
peel of one orange
salt and pepper to taste

Brown chicken in small amount of oil. Remove.
Saute small onion in oil.
Put chicken back in pan; add butter.
Cover 2/3 chicken with hot water.
Add pepper, stock base, pinch corriander and 2 cubes of ginger.
Simmer 40 min.
Remove chicken and debone.
Add grated peel, sour cream and one more cube.
Stir.
Add chicken and cook until cream is bubbly.
Serve over rice.
