Chocolate Chip Bran Muffins


1 3/4 c. all-purpose flour
5 tsp. baking powder
3/4 tsp. salt
1 c. sugar
1/2 c. chocolate chips
1 c. milk
1 1/4 c. bran flakes (I use Post in the red box)
2 eggs
1 tsp. vanilla
1/2 c. vegetable oil

Combine milk and bran flakes and allow to sit in a bowl.
Combine dry ingredients, including chocolate chips.
Mix eggs, vanilla and oil well and add to bran mixture.
Add wet ingredients to dry ingredients.
Stir to blend, but don't overmix.
Bake at 375° for 20 min. Makes 6 Texas-size muffins.
