Chopped Pickle Relish


12 large cucumbers
8 green peppers
10 medium onions
4 tbs. salt
5 c. sugar
5 c. vinegar
3 tbs. celery seed
6 tbs. mustard seed

Slice cucumbers lengthwise and remove seeds.
Grind cucumbers, peppers, and onions
with coarse blade of grinder, and add salt.
Let stand overnight. Drain well.
Combine remaining ingredients and pour
over the vegetable mixture.
Bring to a boil and simmer for 20 min.
Pack in hot, sterilized jars and process
10 min. in hot water bath.
Yield: 8 pints.
