Clam Fritters


1 pt. fresh clams
2 eggs
1/3 c. clam juice
1 1/3 c. flour
2 tsp. baking powder
salt and pepper to taste

Steam clams, saving juice.
Drain and chop clams; set aside.
Meanwhile, beat eggs until light,
adding dry ingredients and clams.
Deep fat fry 3-5 min. and drain well.
Serves 2.
