Cinnamon Fried Chicken


2 lb. fryer, cut up
2 tsp. ground cinnamon
1 tbs. sugar
1 1/2 tsp. pepper
1 tsp. ground oregano
1 tbs. salt
1 c. flour
vegetable oil

Wash chicken pieces and pat dry.
In a small bowl, mix cinnamon, sugar,
pepper, oregano and salt.
Sprinkle evenly on chicken
to coat all surfaces.
Wrap to seal and refrigerate overnight.

To fry, dredge chicken in flour to coat.
In a skillet, heat oil and cook slowly,
turning, until chicken is done,
about 25 min.
Makes 3-4 servings.
