Cinnamon Nut Scones--

3 c. all purpose flour
1/2 c. sugar
2 1/2 tsp. double acting baking powder
1/2 tsp. baking soda
1 tbs. plus 1/4 tsp. Cinnamon
3/4 tsp. Salt
1 1/2 sticks (3/4 c.) cold unsalted butter,
cut into bits
1/2 c. finely chopped walnuts
1 c. buttermilk
1 tbs. heavy cream
Into a bowl sift together the flour, 6 tbs. of sugar,
baking powder, baking soda, 1 tbs. of cinnamon and the salt.
Add the butter and blend the mixture until it resembles meal.
Stir in the walnuts and the buttermilk and
combine the mixture until it just forms a sticky
but manageable dough. On a well floured surface,
knead the dough lightly for 30 seconds and
pat it gently into a 3" cutter dipped in flour
and arrange the scones on an unbuttered baking sheet.
In a small bowl, combine the remaining 2 tbs. sugar,
the remaining 1/4 tsp. cinnamon, and the cream,
brush the tops of the scones in the middle of a
preheated 400F oven for 12-15 min., or until they are golden
Serve the scones warm. Makes about 10 scones.
